Spanish Rice

Vegan. Serves 2 –3

This is an adaption of a traditional recepie

Ingredients
  • 2 teaspoons olive oil
  • 1/2 onion chopped
  • 1/2 red capsicum chopped 
  • 1-2 cloves garlic
  • ¼ teaspoon cumin (ground) 
  • ¼ teaspoon ground coriander seed 
  • 1/2 teaspoon paprika 
  • ground black pepper to taste 
  • 1/2 cup white rice 
  • 1/2 400g (14 oz) can chopped tomatoes
  • 1 cup vegetable stock (broth)
  • salt to taste 
  1. Saute the onion and capsicum in the olive oil until the onion softens 
  2. Add the garlic and cook for 1 minute 
  3. Add the spices and cook for 30 seconds 
  4. Stir in the rice and cook for 2 minutes.
  5. Add the tomatoes and stock and simmer until the rice is cooked.
